I really enjoyed this article on the art of Gnocchi making. I'm a culinary student and one of my instructors, a fine chef and of Italian decent makes the LIGHTEST, FLUFFIEST gnocchi. It was what made me fall in love with Gnocchi. Reading what you put together helped me fill in some gaps. The day he taught us to make Gnocchi, we were also busy making pastas so we never made it ourselves. I've been practicing every since trying to get that fluffy consistency and your comments seem so spot on about not kneading it, which is what I tend to do.

Keep doing what you are doing, great post and really seems very spot on.

lol several of the responses bloggers submit crack me up, now and again i think about if they even read the content and threads before placing a comment or whether or not they basically read over the subject of the blog post and come up with the initial thought that pops into their heads. anyways, it is really relaxing to browse through smart commentary now and then rather than the very same, outdated oppinion vomit that i regularly discover on the web i'm going to have fun with a couple of hands of zynga poker adios
