I'm a culinary student and one of my instructors, a fine chef and of Italian decent makes the LIGHTEST, FLUFFIEST gnocchi. It was what made me fall in love with Gnocchi. Reading what you put together helped me fill in some gaps. The day he taught us to make Gnocchi, we were also busy making pastas so we never made it ourselves. I've been practicing every since trying to get that fluffy consistency and your comments seem so spot on about not kneading it, which is what I tend to do.
